I may be in the minority, but I don't see the Giants problems with the front 7 as scheme related; I think they're personnel (talent) related.
The Bettcher scheme isn't a true 3-4. It's more of a hybrid mix of the front 7. For the majority of plays, the defensive linemen are clogging running routes and linebackers/edge rushers are necessary on passing downs. How's that working... if you watch MOST 3d down opportunities, the answer is "awful".
The Giants (still) can't stop crossing routes, contain mobile quarterbacks, or get any penetration at the LOS. Again... I see this as an issue with personnel and almost exclusively a problem with linebackers. The DL is doing their job and gaining a stalemate at the LOS. Linebackers are unable to get penetration and unable to cover the seam in the secondary on crossing routes. That's my kind way of saying that the Giants linebackers are stinking-up the joint.
I think Bettcher’s reputation was overblown and even called it out when he was brought on.
Pretty sure he only had one good year in ARI with the rest being pretty pedestrian. And that one good year was a healthy mix of scheme with the talent to pull it off.
As we see here it’s a square peg trying to be jammed into a round hole. It doesn’t work.
